Good recipe for horseradish sauce? ?

Need it to go with my prime rib roast.

I use 2 cups of horseradish and 1 cup of mayo and thats it. It is so delicious..Depending on how big your roast is or how much sauce you want you can add or take away a little. Hope this helps...

Sautee a couple of chopped shallots in oil about 5 minutes. Add 1 cup of white wine and reduce by half. Then add half a cup (more to taste) of fresh grated horseradish and a quart of cream; bring to a boil and cook 10-20 minutes until desired consistency. Strain and season with salt and pepper. Serve with your meat.
